Strawberry, Apple and Rhubarb Coconut Cobbler

Strawberries, apples and rhubarb make a yummy cobbler filling, especially when the topping includes shredded coconut. Easy to make and easy to enjoy!

Ingredients
- Fruit filling:
- 3cups3 cups fresh fruit (rhubarb, apple and strawberries)
- 1tablespoon1 tablespoon sugar
- 1tablespoon1 tablespoon water
- ZestZest of half a lemon
- Cobbler Top:
- 2tablespoons2 tablespoons butter, softened
- 1 1/2tablespoons1 1/2 tablespoons all purpose whole wheat flour
- 1tablespoon1 tablespoon sugar
- 1/2cup1/2 cup coconut, shredded
- 1/4cup1/4 cup walnuts, roughly chopped
Preparation
Step 1
Preheat oven to 350°F.
Fruit Filling:
Chop rhubarb, apple and strawberries into even sized pieces. Place into a pot with water, lemon zest and sugar. Stir to coat and simmer until soft.
Cobbler Top:
Meanwhile, make the crumb topping by chopping butter and rubbing it into the flour with your finger tips. Rub together till the butter forms a bit larger than pea-sized pieces. Add sugar, coconut and walnuts; stir together and set aside.
Place fruit mix into a baking dish. Top with the crumb topping and bake 15 to 20 minutes.
