Favorite Carne Con Papa or Cuban Beef Stew

This hearty beef stew is usually served over rice, but can be enjoyed alone as well.

Ingredients

  • 3 to 4 potatoes, peeled and cut into chunks
  • 2 1/2 lbs. of beef cubes for stew
  • 1 large white onion, chopped into fairly large chunks
  • 1 red and 1 green pepper
  • 1 tsp. cumin
  • 12 green olives stuffed with pimento
  • 1 to 2 tbs. capers, according to taste
  • 2 tbs. dried parsley
  • 1 tsp. oregano
  • 1/3 cup raisins, yellow or dark (optional)
  • 2 tbs. garlic powder
  • 1 tbs. oregano
  • 8 oz. tomato sauce
  • 1 packet of Sazon Goya with cilantro and achiote
  • 1 to 2 tbs. balsamic vinegar
  • 8 oz. dry white cooking wine
  • 1 large can of tomatoes
  • 2 to 3 bay leaves
  • salt and pepper to taste

Preparation

Step 1

Combine all ingredients in ovenproof container.

Bake at 200 degrees for 6 to 7 hours.

Serve over white rice.
