Favorite Carne Con Papa or Cuban Beef Stew

This hearty beef stew is usually served over rice, but can be enjoyed alone as well.

Ingredients
- 3 to 4 potatoes, peeled and cut into chunks
- 2 1/2 lbs. of beef cubes for stew
- 1 large white onion, chopped into fairly large chunks
- 1 red and 1 green pepper
- 1 tsp. cumin
- 12 green olives stuffed with pimento
- 1 to 2 tbs. capers, according to taste
- 2 tbs. dried parsley
- 1 tsp. oregano
- 1/3 cup raisins, yellow or dark (optional)
- 2 tbs. garlic powder
- 1 tbs. oregano
- 8 oz. tomato sauce
- 1 packet of Sazon Goya with cilantro and achiote
- 1 to 2 tbs. balsamic vinegar
- 8 oz. dry white cooking wine
- 1 large can of tomatoes
- 2 to 3 bay leaves
- salt and pepper to taste
Preparation
Step 1
Combine all ingredients in ovenproof container.
Bake at 200 degrees for 6 to 7 hours.
Serve over white rice.
