Ingredients
- 10 ounces couscous
- 2 cups boiling water
- 1/3 cup chicken broth
- 1 tablespoon olive oil
- Zest and juice of 2 lemons
- 1 yellow pepper, seeded and finely chopped
- 6 green onions, finely chopped
- 4 tablespoons freshly chopped mint
- Salt and black pepper to taste
Preparation
Step 1
Put the couscous into a large bowl and pour the boiling water over it. Stir and cover. Let set for 6-7 minutes.
Add the chicken broth, olive oil, lemon juice and zest, and mix thoroughly.
Stir in the chopped pepper, onions and mint. Season with salt and pepper.
Spoon the couscous in the center of each dinner plate and surround with the roasted vegetables.
