Ingredients
- 1 green bell pepper, chopped
- 1 small onion, chopped
- 1 tablespoon olive oil
- 2 garlic cloves, chopped
- 1/4 cup dry white wine
- 28 ounce can diced tomatoes
- 1 tablespoon Cajun seasoning, divided
- 1/2 teaspoon pepper
- 2 teaspoons hot sauce
- 4 (6 ounce) cod fillets
Preparation
Step 1
Preheat oven to 350°F.
Sauté bell pepper and onion in hot oil in an ovenproof skillet over medium heat until tender. Add garlic and sauté one minute more. Add wine and cook 3 minutes or until liquid is absorbed. Stir in tomatoes, 1 teaspoon Cajun seasoning, pepper and hot sauce. Cook, stirring occasionally for 10 minutes. Remove from heat.
Sprinkle one side of cod fillets evenly with remaining Cajun seasoning. Place fillets, seasoned sides up on top of tomato mixture in skillet. Bake for 25 minutes or until fish flakes with fork. Serve immediately.
