Ingredients
- 2 bunches medium asparagus, ends trimmed
- 2 Tablespoons olive oil
- Kosher salt to taste
- Freshly ground black pepper to taste
- for Vinaigrette...
- 1 Tablespoon Dijon mustard
- 2 Tablespoons vinegar
- Salt & pepper to taste
- 1/4 cup olive oil
- 1/2 cup reduced fat crumbled feta cheese
Preparation
Step 1
Toss asparagus & 2T olive oil, salt & pepper. Arrange in a single layer on separate large rimmed baking sheets.
Roast in the oven at 425 until tender and the tips are slightly charred; 10-12 minutes.
While asparagus is roasting... In a bowl mix Dijon, vinegar, salt & pepper. Whisk in 1/4c olive oil to emulsify.
Place roasted asparagus on a serving platter; drizzle with vinaigrette, sprinkle with crumbled feta cheese.
