Warm Bacon & Egg Salad

  • 8 slices bacon
  • 3 eggs
  • 4 tsp sugar
  • 4 tbsp apple vinegar
  • 4 tbsp bacon grease
  • 1 lbs spinach leaves
  • 1/2 C mushrooms
  • 4 tbsp water
  • 4 tsp salt

Preparation

Step 1

Hard boil eggs.
Cook bacon and crumble saving 4 tbsp bacon grease. In pan, add bacon grease, sugar, vinegar, water, salt. Cook until warm and keep warm. Quarter hard boiled eggs. In bowl, add spinach, mushrooms and eggs. Top with warm dressing.
