Pumpkin Pie Squares

Ingredients

  • Crust:
  • 1 cup flour
  • 1/2 cup oatmeal, quick style
  • 1/2 cup brown sugar
  • 1/2 cup margarine
  • Filling:
  • 2 cups pumpkin
  • 1-13oz can evaporated milk
  • 2 eggs
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp ground cloves
  • Topping:
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar
  • 2 tbs margarine

Preparation

Step 1

Crust:

Mix all ingredients until crumbly. Press in 9 x 13 cake pan and bake for 15 minutes at 350 degrees.

Filling:

Combine and beat well in mixing bowl. Pour into crust and bake for 30 more minutes at 350 degrees.

Topping:

Combine ingredients and sprinkle over pumpkin bars. Return to oven for 20 minutes longer or until filling is set.

Cool in pan before cutting into squares. Serve with whipped topping.
