Butter Lettuce and Egg Salad

Ingredients

  • 8 eggs
  • 1/2 cup Whole egg Mayonnaise
  • 2 tbsp malt vinegar
  • 2 tbsp buttermilk
  • sea salt and cracked pepper to taste
  • 150 g butter lettuce, leaves separated
  • 2 tbsp chopped chives

Preparation

Step 1

Cook eggs in saucepan of boiling water for 8- 9 minutes. Allow to cool completely. Peel and remove yolks from 5 eggs. Place in a bowl and mash to form a paste. Discard whites or slice for salad. Cut remaining eggs into quarters and set aside. Add mayo, vinegar, buttermilk, and salt and pepper to egg yolks mixture to combine. Place the lettuce leaves, eggs and chives on plate and drizzle with dressing. Serves 4.
