Salad dressing - Greek Lemon Oregano

Ingredients

  • 2 cloves garlic
  • 1/4 c red wine vingegar
  • 1/4 c fresh lemon juice
  • 1/1 /2 tsp. dijon mustard
  • 3/4 tsp. salt
  • 3/4 tsp. ground pepper
  • 1/4 c chopped fresh oregano
  • 1 1/2 cups extra-virgin olive oil
  • 1/4 cup finely chopped shallots OR red onion

Preparation

Step 1

In food processor, mix all ingredients except olive oil. With motor running, slowly drizzle in oil unitl well emulsified. Taste, add salt pepper if needed.
