Curried Chickpeas

Great as a side dish or a main meal.

Sharon, an Askville member, kindly gave me this recipe.

My teen daughter was vegetarian for a couple of years, and even though she does eat a small amount of meat now, this has continued to be one of her favorites.

Ingredients

  • 1 tbsp vegetable oil
  • 1 1/2 cups chopped onion
  • 2 cloves garlic, finely chopped
  • 1 1/2 cups cooked brown rice
  • 1 14.75oz can of cream-style corn
  • 1 lb can of chickpeas, rinsed and drained
  • 1/3 cup of golden raisins
  • 2 tsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/4 cup water

Preparation

Step 1

Preheat oven to 375. Lightly grease a 1 1/2 quart baking dish. Saute onions and garlic in oil until onions are browned. Add remaining ingredients. Mix well and spoon into baking dish. Bake covered for 30 minutes.
