Spinach Fritters

Ingredients

  • Filling:
  • 35 oz. chopped spinach
  • 7 oz. Parmesan cheese
  • salt
  • 2 T corn flour
  • 2 T. Oil

Preparation

She gave a recipe for the pastry, but it was a disaster. Use homemade pie crust instead.

Boil the spinach to cook, drain and allow to cool. In a bowl add the oil, cornflour, salt and Parmesan to the spinach. Mix well.

Cut rounds of crust. Add a small amount of the spinach to the pastry round. Moisten the edges and press to seal.

Paint each fritter with egg and sprinkle with Parmesan Cheese. Place on a try and cook at 350F till brown and crispy. Remove and serve hot or at room temperature.
