Mashed Potatoes with Chives & Bacon

Ingredients

  • 5 pounds Idaho potatoes
  • margarine
  • milk
  • Half & Half
  • package pre-cooked bacon
  • package grated cheddar cheese
  • garlic
  • fresh chives
  • salt
  • pepper

Preparation

Step 1

Boil potatoes until fork tender with skins on. Mash potatoes in large bowl. Stir in milk, Half & Half, and margarine to taste and beat with hand mixer until smooth. Add chives and three cloves of grated garlic. Add salt and pepper to taste. Cook bacon in microwave until crispy, and crumble into mixture. Mix in. Bake at 350 for 30-45 minutes and serve with grated cheese on top.
