Double Chocolate Olive Oil Brownies

  • 4 ounces bittersweet chocolate, chopped
  • 1/3 cup extra-virgin olive oil or chocolate-flavored olive oil
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon sea salt
  • 2 large eggs, room temperature
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup white-chocolate chips

Preparation

Step 1

Preheat oven to 350 degrees. Line an 8-inch-square baking pan with parchment paper and grease the sides of pan.

Melt the chocolate over low heat on the stovetop or in the microwave. When melted, whisk in the oil. Let cool.

Meanwhile, mix the flour and salt in a small bowl. In a large bowl, use an electric mixer on high speed to beat the eggs and sugar until pale, thickened and billowy, about 5 minutes. Fold in the vanilla and the cooled chocolate mixture, and then fold in the flour and white-chocolate chips, stirring until just combined. Pour into the prepared pan and distribute batter evenly.

Bake for 20-25 minutes. The top will be dry and crackly, though a toothpick inserted in the center should emerge still a little wet. Cool completely and cut into squares.
