Ziti with Portobello Mushrooms

Mushrooms, and caramelized onions with goat cheese make this a delicious meatless or meat dinner.

Ingredients
- 2 tablespoons butter
- 4 tablespoons olive oil
- 3 onions chopped
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1 pound portobello mushrooms halved and cut crosswise
- 3 tablespoons fresh chopped parsley
- 1/4 teaspoon ground black pepper
- 3/4 pound the ziti pasta
- 3 ounces soft goat cheese
- 3 tablespoons grated Parmesan cheese and additional for serving
Preparation
Step 1
In a large pan melt 1 tablespoon of butter with 2 tablespoons of olive oil over moderate heat. Add onions, 1/2 teaspoon of salt, sugar and cook... frequently stirring until the onions are well browned for about 20 minutes. Remove from the pan.
In the same pan, melt the remaining 1 tablespoon of butter with 1 tablespoon of olive oil over moderate heat. Add the mushrooms and 1/4 teaspoon of salt and cook stirring until tender and brown for about eight minutes.
In a large pot of boiling salted water cook the Ziti pasta about 13 minutes. Save about 3/4 cup of pasta water and drain off the rest. Toss the pasta and half a cup of the reserved pasta water with the mushroom mixture, 1 tablespoon olive oil, the goat cheese and Parmesan.
Serve with the extra Parmesan.
