Potato Soup

Ingredients

  • 6 medium potatoes, peeled and sliced
  • 4 carrots, diced
  • 6 stalks celery, diced
  • 1 onion, chopped
  • 2 quarts water
  • 6 T butter
  • 6 T flour
  • 1 tsp salt
  • 1 tsp pepper
  • 1 1/2 C milk

Preparation

Step 1

1. Cook potatoes, carrots and celery in water until tender; about 20 minutes. Drain, reserving liquid and setting vegetables aside.

2. In same pot, saute onion in butter until soft, stir in flour, salt and pepper. Gradually add milk, stirring constantly until thickened. Gently stir in vegetables and water gradually until soup is desired consistency. Simmer and stir occasionally about 4 hours. Keep adding water as soup cooks down.
