Coconut-Pineapple Loaf

Make sure pineapple is well drained
Do not overmix

Ingredients

  • 1 1/2 cup sweetened Shredded coconut
  • 1/2 cup unsalted buter, room temp
  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 3 lg eggs
  • 1 cup sour cream
  • 1 can pineapple chunks, drain well

Preparation

Step 1

Preheat oven to 350F
Toast coconut 6-10 mins
Butter 9x5 loaf pan
Whisk togeteher flour, baking soda & salt
using electrci mixer beat butter, sugar until fluffy, Add eggs 1 at a time, add flour and sour cream alternately until incorporated
Using rubber spatula fold in pinapple and 1 cup coconut
Spoon into pan and sprikle remaining coconut on top of loaf
Bake 65-70 minutes & cover with foil until half way trough
Let cool 15 minutes remove from pan and transfer to wirte rack.
