Ingredients
- 1 pound of fettuccine pasta (or you can use spaghetti)
- 1 pound of Italian sausage (I used an Italian chicken sausage but you can use turkey or pork too)
- 1 shallot, chopped (right next to the onions and garlic...you can use a small onion instead if you like)
- 3 garlic cloves, chopped
- 1 (15 oz) can diced tomatoes
- 1 tablespoon Italian seasoning
- 1 (8 oz) can tomato sauce
- Extra Virgin Olive Oil (EVOO)
- Salt and Pepper
- 3 About 3 tablespoons of cream (whatever you have on hand...whipping cream, heavy cream or even milk)
- Parmesan Cheese, grated to garnish
Preparation
Step 1
- Bring a large pot of water to a boil and cook your pasta to al dente (about 7 minutes or so).
- Meanwhile, over medium-high heat, brown your sausage in a tablespoon of EVOO. Once it's browned and crumbly, add in your shallot and garlic. Saute a few minutes.
- Reduce heat to low and stir in your diced tomatoes, Italian seasoning and tomato sauce. Sprinkle in a little salt and pepper. Simmer about 5 minutes. Stir in your cream.
- Drain the water from your cooked pasta. Stir the pasta into your tomato sauce and combine.
- Ladle pasta into bowls and garnish with a little cheese.
