Linguine with Triple Red Pepper Sauce

Ingredients

  • 2 T Olive Oil
  • 2 large garlic cloves, chopped
  • 1 red bell pepper, diced
  • 1/2 t. crushed red pepper
  • 7 oz. jar of roasted red peppers, drained and julliened
  • 1/2 lb.linguine, freshly cooked
  • 1/2 c. grated fresh parmesan
  • 1/4 c. chopped fresh parsley

Preparation

Step 1

Heat oil in skillet over medium heat.
Add chopped garlic, diced pepper and crushed red pepper and saute until bell pepper softens (about 5 min.)
Remove from heat
Add roasted red peppers, linguine and parmesan, toss until well coated
Season with salt and pepper
Serve with freshly grated cheese and parsley
