Ingredients
- 1/4 cup orange marmalade
- 2 Tbsp. balsamic vinegar
- 1/2 tsp. ground ginger
- 1/2 tsp. ground coriander
- 1/4 tsp. cayenne pepper
- 8 small chicken drumsticks (about 1 1/2 lb)
- 1 Tbsp. olive oil
- kosher salt and pepper
Preparation
Step 1
Position the oven rack about 6" from the broiler. In a small bowl, combine the marmalade, vinegar, ginger, coriander and cayenne.
Line a broiler proof rimmed baking sheet with nonstick foil. Toss the chicken with the oil and season with 1/2 tsp. salt and 1/4 tsp. pepper. Broil for 6 minutes.
flip and broil until the skin is crisp and chicken is nearly cooked through, 5-6 minutes more. Brush the chicken with half the jam mixture and broil for 1 minute. Brush with the remaining jam mixture and grill until the mixture begins to caramelize and the chicken is cooked through, abut 2 minutes more.
