Slow-Cooker Tangy Cherry Chicken

Ingredients

  • 1 C low-sodium chicken broth
  • 3 Tbsp honey
  • 3 Tbsp balsamic vinegar
  • 1-1/2 tsp five-spice powder (or apple or pumpkin pie spice)
  • 3/4 tsp salt
  • 5 carrots, sliced
  • 1 large red onion, quartered and thinly sliced
  • 2 Tbsp thin strips peeled fresh ginger
  • 1/2 C dried cherries
  • 4 5-ounce skinless chicken thighs
  • 2 Tbsp cold water
  • 1 tablespoon cornstarch

Preparation

Step 1

1. Whisk broth, honey, 2-1/2 tablespoons vinegar, five-spice powder, and salt in a 5- to 6-quart slow cooker. Stir in carrots, onion, and ginger. Sprinkle with cherries and top with chicken. Cover and cook until chicken and vegetables are fork-tender, 3-4 hours on high or 6-8 hours on low.

2. About 25 minutes before cooking time is up, mix water and cornstarch in small bowl until smooth. Stir cornstarch mixture into slow cooker. Cover and cook on high until mixture simmers and thickens, about 20 minutes. At end of cooking time, stir in remaining 1/2 tablespoon vinegar.
