Beet Relish

Ingredients

  • 6 cups grated beets (cooked)
  • 4 cups white sugar
  • 1 +1/2 cups vinegar
  • 1 tsp. salt
  • Liquid Certo

Preparation

Step 1

Wash beets (skins on - cuts ends off). Place in large pot, add water and cook till soft. Remove and cool by running under cold water. Remove skins. Grate beets and put into dutch oven or large pot. Add sugar, vinegar and salt. Boil 20 minutes. Add Certo and boil 2 minutes. Pour into jars and seal. Serve with roast beef.
