Ingredients
- 3 Boneless, Skinless, Chicken Breasts
- Salt & Pepper to taste
- 1 Cup Onion, chopped
- 1 lb. New Yukon Gold or Redskin Potatoes, quartered
- 8 oz. Fresh Spinach
- 1 Can Cream of Celery Soup, divided
Preparation
Step 1
Arrange chicken on a baking sheet lined with aluminum foil. Broil for 3-4 minutes on each side or until very lightly golden. Cut chicken into 1" cubes; season with salt & pepper. Layer onion, potatoes and spinach in a slow cooker. Add half the soup. Add chicken; top with remaining soup. Cover and cook on high setting for 3-4 hours, or on low setting for 6-8 hours, stirring once or twice. Serves 6.
