Baked Ricotta w/ Lemon and Herb

Ingredients

  • 1 lb fresh ricotta cheese
  • Grated zest of 1 lemon
  • 1 tsp chopped fresh thyme
  • 1/2 tsp chopped fresh rosemary
  • Kosher salt
  • Pinch of red pepper flakes
  • 1 tbsp grated Parmesan cheese
  • 1 tbsp EVOO
  • Sea salt
  • Grilled or toasted bread for serving

Preparation

Step 1

Preheat the oven to 375 degrees F. Whisk the ricotta, lemon zest, thyme rosemary, salt and red pepper flakes in a medium bowl until smooth and creamy.

Transfer to a 2 c ramekin and sprinkle with parmesan. Bake until gold and bubbling, about 15 mins. Drizzle with olive oil and sprinkle with sea salt. Serve with bread.
