Tomato, Corn and Cheese Soup

Ingredients

  • 2 tab. Corn oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp. Oregano leaves
  • 3 cups chicken broth
  • 1 can Italian tomatoes, 1 lb. 13 oz.
  • 2 cups sweet corn, frozen, canned or fresh
  • lb. Jack cheese or any mild white cheese
  • Salt and pepper to taste

Preparation

Step 1

Saute onion with garlic and oregano. Add tomatoes and mush with fork to remove large pieces. Add broth. Simmer for 10 minutes. Add corn and cheese. Salt and pepper to taste. Great with leftover rice or pasta. Yum
