Lime Pickles

Ingredients

  • 7 lbs cucumbers, sliced 1/4 in thick
  • 2 c lime in 3 gal water
  • 9 c sugar
  • 1 Tbsp salt
  • 1 tsp celery seed
  • 1 tsp allspice

Preparation

Step 1

Soak cucumbers in lime water for 24 hours.

Rinse and let soak in clean, cold water for 3 more hours.

Drain.

Mix and dissolve all remaining ingredients over heat.

Add cucumbers and cover.

Let stand for 24 hours.

Stir again and put on heat.

Boil gently for 35 minutes and seal.
