Turkey Chowder

Ingredients

  • 1 small onion, chopped
  • 2 stalks celery, chopped
  • 2 Tbsp butter
  • 2 c sliced carrots
  • 3 c chicken broth (or 3 bullion cubes)
  • 1 large floret broccoli, chopped
  • 1/2 c oat flour (blend oats in blender to make flour)
  • 2 c milk
  • 6 oz Swiss cheese, grated
  • 1 1/2 c diced turkey or chicken

Preparation

Step 1

Saute onions and celery in butter in a large stock pot. Add carrots, broth, and broccoli to pot and bring to a boil. Simmer 10 minutes. Bring to a rolling boil and add oat flour, stirring constantly. Let simmer about 10 minutes more, stirring to remove lumps. Reduce heat to low and add milk and turkey. Remove from heat and stir in cheese.
