Fettucini Carbonara

Ingredients

  • 2 Tbs olive oil
  • 4 shallots, diced
  • 1 large onion, cut into thin slices
  • 400 g bacon OR 250g panchetta and/OR 500g chicken breast fillet (diced)
  • 1 clove garlic
  • fettucini pasta
  • 2 eggs
  • 2 egg yolks
  • 1/2 cup thickened cream
  • 3/4 cup shredded Parmesan cheese
  • salt and pepper to taste

Preparation

Step 1

Bring large pot of water to the boil, add a pinch of salt and fettucini pasta. Cook according to package directions (around 4-5 mins for fresh fettucini or 8-10 minutes for dried).

While water is boiling, heat olive oil, saute shallots and onion. Add garlic and bacon (or panchetta and/or chicken breast) until evenly browned.

In a medium bowl whisk together egg yolks, cream and shredded Parmesan.

Drain cooked pasta and return to pot. Pour bacon mixture over the top then stir in cream mixture. Cook on low heat for a few minutes. Season with salt and pepper to taste.
