Bacon Mushroom Crock Pot Soup

Ingredients

  • 7 slices bacon, chopped and crisply fried
  • 2 ( 8 ounce ) packages of mushrooms, chopped
  • 1 1/2 cups chopped carrots
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 2 shallots, peeled and chopped
  • 1 teaspoon dried oregano
  • 4 cups beef broth
  • 2 Tablespoons tomato paste
  • 2 Tablespoons soy sauce
  • salt and pepper to taste

Preparation

Step 1

Reserve the bacon as a garnish, then combine all the other ingredients in the crock pot. Cook on low for 6 to 7 hours or on high for 3 to 3 1/2 hours.
