Ingredients
- 2 small zucchini’s, 1 inch dice
- 2 small yellow squash, 1 inch dice
- 1 medium onion, 1 inch dice
- 1 (15 oz) can Diced OR Stewed Tomatoes (No Added Sugar)
- Seasoning salt and pepper to taste
- 1 handful of fresh flat leaf parsley, chopped
Preparation
Step 1
Heat a skillet over medium high heat and lightly spray with cooking oil.
Add garlic, zucchini, squash, and onions.
Toss vigorously for 5-8 minutes, or until vegetables are tender.
Add tomatoes and seasoning.
Reduce heat and simmer for 6 –8 minutes or until thickened.
