TURKEY SOUP WITH TARRAGON

Ingredients

  • 1 lb. boneless skinless turkey breast, cut into 1/2" cubes
  • 2 tbsp flour
  • 1 1/2 tbsp olive oil
  • 1 large onion coarsely chopped
  • 2 large carrots sliced
  • 1 large rib celery, thinly sliced
  • 1 tbsp dried tarragon leaves
  • 1/4 tsp pepper
  • 2 large potatoes, peeled, cubed (1/4")
  • 4 cups chicken broth
  • 1 1/2 tbsp dijon mustard

Preparation

Step 1

Coat turkey cubes with flour. Cook in oil in dutch oven over medium heat until lightly browned. Add onion, carrots, celery, tarragon and pepper, cook until onion is tender, about 5 minutes.

Add remaining ingredients, except salt and heat to boiling. Reduce heat and simmer, covered 30 minutes. Season to taste with salt.
