Ingredients

    lb. boneless skinless turkey breast, cut into 1/2" cubes

  • 2

    tbsp flour

  • 1 1/2

    tbsp olive oil

  • 1

    large onion coarsely chopped

  • 2

    large carrots sliced

  • 1

    large rib celery, thinly sliced

  • 1

    tbsp dried tarragon leaves

  • 1/4

    tsp pepper

  • 2

    large potatoes, peeled, cubed (1/4")

  • 4

    cups chicken broth

  • 1 1/2

    tbsp dijon mustard

Directions

Coat turkey cubes with flour. Cook in oil in dutch oven over medium heat until lightly browned. Add onion, carrots, celery, tarragon and pepper, cook until onion is tender, about 5 minutes. Add remaining ingredients, except salt and heat to boiling. Reduce heat and simmer, covered 30 minutes. Season to taste with salt.
