Amish Potato Salad

Ingredients

  • 3-5 Lbs. Potatoes, cooked and diced
  • 1 Cup Diced Celery
  • 1 Onion, diced
  • 6 Hard Boiled Eggs
  • 1 1/2 Cup Mayonnaise or Miracle Whip
  • 2 tsp. Yellow Mustard
  • 1/4 Cup Cider Vinegar
  • 3/4 Cup Sugar
  • 2 tsp. Salt and Pepper to taste

Preparation

Step 1

Dice cooked potatoes. Stir together potatoes, eggs, celery and onions. In separate bowl mix salad dressing ingredients. Pour over potato mixture and stir. Refrigerate. Best if served the next day.
