Ingredients
- MARINADE:
- 1 leg of lamb
- Minted Cucumber Chutney (see recipe)
- Tomato-Eggplant Jam (see recipe)
- 2 cups olive oil
- 6 rosemary sprigs
- 2 tablespoons chopped fresh thyme
- 8 garlic cloves coarsely chopped
Preparation
Step 1
Marinate the lamb 4 hours or overnight. Preheat grill, cook lamb on rotisserie until of desired doneness.
Serve sliced with Minted Cucumber Chutney and Tomato-Eggplant Jam.
