Summer Macaroni Salad

Ingredients
- 8-16 oz. dry elbow macaroni, cooked, rinsed, and drained
- 1/3 cup diced cucumber
- 1/2 cup diced vine-ripened tomato
- 1/2 cup prepared mayonnaise
- 1 1/2 tsp. sugar
- 1 1/2 tbsp. cider vinegar
- 1 tsp. celery seed
- 1/2 teaspoon kosher salt, plus more to taste
- Freshly ground black pepper
- Adjust dressing to amount of pasta.
Preparation
Step 1
In a large bowl combine the macaroni, cucumber, and tomato. In a small bowl, whisk together the sugar and vinegar. Add mayonnaise, salt and pepper. Pour the dressing over the salad and stir to combine. Refrigerate to combine flavors. Season with additional salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.
