Ingredients
- 3/4 cup sun-dried tomatoes
- 2 plum tomatoes quartered
- 1 small clove garlic
- 2 teaspoons olive oil
- 1 tablespoon balsamic vinegar
- 2 tablespoons parmesan cheese grated
- 1 tablespoon pine nuts
- salt
- pepper
Preparation
Step 1
Boil 1 cup water add sun-dried tomatoes and soak 5 min. Remove tomatoes reserving 2 T of liquid. Place liquid, dried tomatoes, plum tomatoes, garlic, oil & vinegar in food processor or blender. Blend til smooth. Add cheese & pine nuts. 2 servings with 1/4 lb spegetti.
