Ingredients
- 1 3-4 lb pork shoulder or chuck roast
- 2 16 oz packages frozen mango chunks divided (1 package thawed and pureed)
- 2-3 red bell peppers chopped into 1 inch chunks
- 1 large onion chopped into 1 inch chunks
- 1 jar of your favorite chipotle salsa
- 1 chipotle chili in adobo chopped fine
- 1 tsp ground cumin
- 1 tsp smoked paprika
- S/P to taste
- Cilantro and lime wedge garnish
Preparation
Step 1
Season pork roast with salt and pepper or steak seasoning if you desire and brown on all sides
Place the mango chunks, onion and bell pepper in a slow cooker and place the browned roast on top
Mix the mango puree, salsa, chipotle and spices in a small bowl and pour mixture on top of the roast
Cover and cook on low for 8 hrs or until roast falls apart
Check sauce to see if it needs any salt or pepper and serve
Garnish with chopped cilantro and/or lime wedge if desired
** Great as a burrito filling, with a side of rice and salad or all by itself
