Maple pecan banana muffins

Ingredients

  • 3 medium very ripe bananas
  • 1 1/4 c white wheat flour
  • 3/4 t baking soda
  • 1/4 t salt
  • 2 T unsalted butter softened
  • 1/4 c brown sugar or maple sugar
  • 2 large egg whites
  • 1/4 c pure if you can get it maple syrup
  • 2 T unsweetened apple sauce
  • 1/2 t vanilla
  • 1/3 c crushed pecans

Preparation

Step 1

heat oven to 325 and put cupcake liners in cupcake pans
mash banana in a bowl and set aside
in a medium bowl whisk flour, baking soda and salt
in a large bowl cream butter and brown sugar-add egg whites, banana, maple syrup, apple sauce and vanilla
blend till well mixed-add flour mixture and blend till just combined
fill cupcake liners about half full
spread pecans evenly over each muffin
bake for 35 minutes
