Veal Scallopine

Ingredients

  • 2 Tblsp olive oil
  • 1/4 cup butter or margarine
  • 1 pound sliced veal
  • 3/4 cup flour
  • 1 Tblsp lemon juice
  • 1 Tblsp capers
  • 2 Tblsp dried parsley
  • 1/2 lemon, sliced

Preparation

Step 1

Heat oil and half of the butter in a skillet over medium-high heat.

Coat the sliced veal with flout, shaking off excess, and brown both sides in the skillet.
Transfer to a warm platter and season with salt and pepper.

Remove skillet from heat, add lemon juice, capers, parsley, and remaining butter. Stir. Briefly warm sauce over medium heat. pour sauce over veal, garnish with lemon slices, and serve.
