Italian Baked Fish

Ingredients

  • 1 lb. fish fillets (sole, snapper, cod)
  • 1/4 cup nonfat Italian salad dressing
  • 1/4 cup cornflake crumbs

Preparation

Step 1

Preheat oven to 450 degrees. Marinate fish in dressing for 15 minutes in the refrigerator. Drain, reserving the marinade. Roll fish in cornflake crumbs. Arrange in a baking pan that has been sprayed with non-stick cooking spray. Drizzle remainder of marinade over fish. Bake for 4-5 minutes per half-inch thickness of fish or until fish flakes easily with a fork.

*I actually make this using tilapia fillets and panko bread crumbs and it is delicious.
