Ingredients
- 2 T. olive oil
- 2 cloves garlic, minced
- 4 zucchini, diced
- 1 c. corn kernals
- 1/4 t. dried basil
- 1/4 t. dried oregano
- 1/4 t. dried thyme
- Kosher salt & freshly ground pepper, to taste
- Juice of 1 lime
- 2 T. chopped cilantro leaves
- 2 T. grated Parmesan cheese, to taste
Preparation
Step 1
Heat olive oil in a large skillet over medium high heat. Add garlic to the skillet and cook, stirring frequently, until fragrant, about 1 minute. Add zucchini, corn, basil, oregano & thyme. Cook, stirring occasionally, until zucchini is tender and cooked through about 3-4 minutes. Season with salt & pepper to taste, stir in lime juice & cilantro.
