Bacon Cheddar Biscuits

Ingredients

  • 2-1/4 c flour
  • 3-1/4 t baking powder
  • 1 t salt
  • 1/8 t ground red pepper
  • 1/2 c diced slab bacon (about 3 oz. )
  • 3 T unsalted butter, cubed and chilled
  • 3/4 c shredded sharp cheddar (about 3 oz.)
  • 1-1/2 c heavy cream
  • 2 T unsalted butter, melted

Preparation

Step 1

Combine flour and next 3 ingredients, cover and freeze for 8 hours. Preheat oven to 425. Cook bacon about 6 mins or until brown but not crisp, drain and cool. Toss cubed butter with flour mixture in large bowl, mix with hands, flattening butter until mixture resembles coarse crumbs. Stir in cheese and bacon. Add cream, stir until just combined. Scoop dough evenly into 1 T mounds, arrange 1" apart on baking sheets. Bake 8-10 mins. until golden and cooked thru. Transfer to wire rack and brush with melted butter. Serve warm.
