Mushroom Sausage Soup

Ingredients

  • 2 cups sliced mushrooms (shitake/crimini)
  • 1 lb italian sausage (ground)
  • 1/2 tsp thyme
  • 1/4 tsp crushed red pepper flakes
  • 64 oz chicken broth
  • 1 cup water
  • macaroni/wild rice (depending on preference)
  • 1 bunch fresh spinach

Preparation

Step 1

*Brown sausage in 2 Tbsp olive oil and cook well
*take out sausage and set aside
*add mushrooms & water and cook @ 5-10 min
*add thyme, red pepper, spinach & chicken broth
**meanwhile, cook pasta or rice

serve together along with parm cheese
