Chocolate Stout Cupcakes with Bourbon Frosting topped with Bacon

Ingredients

  • Cupcakes:
  • 2 cups flous
  • 2 cups sugar
  • 3/4 cup cocoa
  • 2 teaspoons espresso
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 cup canola oil
  • 1 egg
  • 2 teaspoons vanilla
  • 1/4 cup milk
  • 1 1/4 cups Guiness (or other stout beer)
  • Frosting:
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1/2 cup butter
  • 1/2 teaspoon cinnamon
  • 1-2 tablespoons bourbon
  • Pinch of salt
  • Crispy bacon

Preparation

Step 1

Preheat oven to 350.
Sift together flour, cocoa, espresso salt, baking powder and baking soda. Set aside.
Mix the canola oil and egg. Add vanilla, milk and beer.
Add the dry ingredients to the wet ingredients and mix. Add the sugar.
Fill cupcake liners 1/2 way and bake 13-16 minutes.
Set aside and cook on a wire rack.

Combine the powdered sugar, vanilla, butter, cinnamon, bourbon and salt. Whip until fluffy. Top cooled cupcakes with frosting and bacon.
