Crab Cakes - Golden

6-7 servings. Serve these crispy cakes with a sauce of your own creation or try a mix of cocktail sauce, sm amount of mayo & dashes of lime juice & hot sauce to taste.

Ingredients

  • 1 lb golden crabmeat or flaked white crabmeat
  • 1 egg yolk, beaten
  • 3 scallions, thinly sliced
  • 1/3 c Italian parsley, finely chopped
  • 1 T mayo
  • 1 T Dijon mustard
  • 1 T fresh lemon juice
  • Worcestershire sauce to taste
  • Salt & fresh ground pepper to taste
  • 1/3 loaf white bread (about 6 slices), crusts removed
  • Vegetable oil for frying

Preparation

Step 1

Squeeze excess water from crabmeat & remove any shells or cartilage. In mixing bowl combine crabmeat & all remaining ingredients except bread & oil. Mix well to combine.

Put bread in food processor or blender & process into crumbs. Add crumbs to crab mixture & mix gently until bread is well coated. Carefully form mixture into cakes & chill well.

Pan fry cakes over med high heat in 1 in oil until nicely browned, 5 min per side. Serve hot.
