Cauliflower-Spinach Dip

Ingredients

  • 4 c cauliflower florets
  • 2 c lightly packed spinach leaves
  • 2 T tahini
  • 2 T fresh lemon juice
  • 3 T EVOO
  • 1 coarsely chopped small garlic clove
  • salt and pepper
  • Pita bread or crisps for serving

Preparation

Step 1

Place cauliflower in a steamer basket set over a pot of simmering water. Cover and steam until crisp-tender, about 8 mins. Add spinach, cover and steam until wilted, about 2 mins. Puree vegetables in a food processor with remaining ingredients until smooth. Serve warm or at room temp with pita bread or crisps.
