Ingredients
- 4 c cauliflower florets
- 2 c lightly packed spinach leaves
- 2 T tahini
- 2 T fresh lemon juice
- 3 T EVOO
- 1 coarsely chopped small garlic clove
- salt and pepper
- Pita bread or crisps for serving
Preparation
Step 1
Place cauliflower in a steamer basket set over a pot of simmering water. Cover and steam until crisp-tender, about 8 mins. Add spinach, cover and steam until wilted, about 2 mins. Puree vegetables in a food processor with remaining ingredients until smooth. Serve warm or at room temp with pita bread or crisps.
