Banana Cake

Ingredients

  • 1 1/2 c banana, mashed
  • 2 tsp lemon juice
  • 3 c all purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 c butter, softened
  • 2 1/8 c sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1 1/2 c buttermilk
  • buttermilk = 1 c milk 9 1 TB lemon juice

Preparation

Step 1

Preheat oven to 275

Grease pan.

In bowl, mix bananas and lemon juice. Set aside.
In bowl, mix flour, baking soda and salt. Set aside.
In large bowl cream butter and sugar til fluffy.
Beat in eggs and vanilla.
Beat in flour and buttermilk.
Stir in banana mixture.
Pour in pan and bake for 1 hour.

Place directly in freezer.
