Ingredients
- 1/2 cup butter
- 1 cup brown sugar
- 1 egg
- 1 cup grated raw carrots (3)
- 1 cup grated raw apples (1)
- 1 cup broken pecan meats
- 1 cup sifted flour
- 3/4 t. soda
- 1 t. vanilla
- 3/4 cup seedless raisins
- 3/4 cup pitted dates
Preparation
Step 1
Cream butter, add sugar. Add eggs. Add carrots, apples, soda, and flour stir together. Then fold in vanilla, raisins, dates and nuts. Turn into greased mold & steam for 3 hours.
Use slotted pan & put the insert with tube into it. Grease all. Put cut and wax pepper over pudding to catch drips.
Hard Sauce –
2 cups powdered sugar, sifted
1 cube butter
2 t. brandy
Blend sugar into butter until smooth add brandy.
