Ingredients
- 2 tbl. olive oil
- 1 lb. shrimp
- 2 tsp. minced garlic
- 1/2 tsp. each salt & pepper
- 1 1/2 c chicken broth
- 1 box frozen artichoke heart
- 3 oz. fresh plum tomatoes
- 1/2 c chopped parsley
- 2 tbl. margarine
- 1 lb. linguine cooked
Preparation
Step 1
minutes,stirring often,until shrimp turn opaque remove shrimp with slotted spoon add
remaining garlic,salt,pepper,&chicken broth to skillet bring to boil and cook 3-5 minutes to
reduce liquid stir in artichoke hearts and tomatoes,chopped cook 5-7 minutes until artichoke
hearts are tender to serve,add shrimp to mixture and cook about 2 minutes until mixture is
hot remove from heat stir in parsley and butter pour over hot pasta and toss to mix
