Cauliflower Soup

Ingredients

  • 2 carrots, chopped
  • 1 cauliflower chopped
  • 1 large onion, chopped
  • 2 large cloves of garlic minced
  • 3 cups of well seasoned chicken stock
  • 1/4 cup butter
  • 2 large potatoes chopped
  • 1/4 tsp nutmeg
  • 2 Tbsp sherry
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tsp tobasco

Preparation

Step 1

1. Melt butter in a large pot
2. Add all vegetables and saute for five minutes
3. Stir in the stock and bring to a boil, then lower the heat and cover the pan with a lid
4. Simmer gently for about 20 minutes or until potatoes are tender
5. Remove pan from heat add tobasco and ceese and salt and pepper
