  • 1/2 C Salt
  • 1/2 C Brown Sugar
  • Warm Water

Preparation

Step 1

using a mayo jar. Add salt and brown sugar, fill the rest of jar with warm water.
Put mixture in a jerk pan. place fish in pan. fill rest of pan with cold water.
put in frig overnight

Put fish on smoker racks add brown sugar to the top of fish and smoke for 8-10 hour
